Colour: Bright gold, with a silver hue.
Nose: Direct but fine. Marked by precision and notes of citrus fruit with a saline component.
Palate: Both complex and clean. Remains full of purity and tension. Delivers dry, mineral notes, along with flavours of grapefruit and white fruits.
Food Pairings: Brut Nature is the perfect match for oysters, raw fish and shellfish, sea urchin and caviar. It is also ideally suited to Thai cuisine or sushi, maki and sashimi.

Pale gold. Nervy lime, ginger and floral scents, with suggestions of iodine and tarragon. Tightly wound, mineral-driven citrus fruit flavors put on weight with air and take a turn to deeper nectarine and pear. Unfolds slowly on the finish, hanging on with excellent tenacity and resonating mineral and floral notes.

A balanced, mineral-driven Champagne, showing a fine, lacy texture that softens the impact of the firm spine of acidity and carries flavors of poached apricot and white cherry, candied kumquat, blanched almond and verbena. The lasting finish offers minerally smoke, oyster shell and saline notes. Chardonnay, Pinot Noir and Pinot Meunier. Disgorged November 2024. Drink now.

Ayala specializes in dry Champagnes and this is their extreme example. It has the right amount of bottle age to soften the intense acidity and bring in some toastiness and fruit. It can be drunk now, but a few more months in bottle would make it even better.
