Located in Burgundy’s Yonne department, the vineyards of the Chablis appellation stretch out in an approximately twenty-kilometre radius around the village of Chablis. The vines are planted on rather gentle slopes (5 to 20% gradient) which face in various directions. The clay-limestone soil dates back to the Upper Jurassic period, known as the Kimmeridgian stage. As the vines are scattered about the area of appellation, they are planted in very diverse types of soil.

This Chablis calls for classic matches. Enjoy its refreshing character as an aperitif served alongside smoked salmon on toast. Its richness is complemented by firm oysters with a slight nuttiness.
