Profile is a blend of our best lots of Cabernet Sauvignon, Merlot and Cabernet Franc, chosen for their concentration, depth of flavor and fine tannin structure. This wine was aged in new French oak chateau barrels and bottled unfiltered. It is very dark and opulently structured -- characteristic of this very ripe vintage. In its youth the wine is loaded with flavors reminiscent of dark berries, plums and black cherries, with fragrant notes of vanilla and spice. The wine's mouthfeel is rich, round and seamless.

The dense ruby/purple-colored 1997 Profile Proprietary Red Wine offers a ripe, sweet nose of licorice, blackberry, cassis, and toast. Medium to full-bodied, with moderately high tannin, abundant new oak, and a long, concentrated finish, it will be at its peak between 2002-2014.

Starts out smooth and rich, with creamy mocha and currant flavors. Concentrated and focused, the tannins gain weight on the finish, giving it a chewy aftertaste. Decant and drink now. The other two bottles were off. Cabernet Sauvignon, Merlot and Cabernet Franc.
