Viticulture: Head-trained, cane-pruned, non-interventionist Ten miles from the Pacific Ocean, northern Santa Cruz Mountains appellation Dry-farmed, non-fertilized, hand-hoed, no insecticides, native cover crop Grown on porous, young (1-3 million years old) fractured sedimentary rock Vinification: 1.5 ton fermentors, hand punchdown, medium cuvaison 2-3% whole clusters, 5 day cool soak, hand punchdown Indigenous yeast, pressed at dryness, 2 months in tank followed by 12 months in barrel without racking Hand-racked using an esquive and hand-cranked barrel tilting device, unfined & unfiltered. Aging: French oak barrels, 30% new, Allier and Nevers forest dominate. Notes: All of the Varner Pinot Noirs are gravity racked and unfined and unfiltered.
